Discovering raw organic cacao..........

Lately I have been drawn to look into raw foods and super foods. I have been busitng to try to make some of these yummy chocolate truffle type balls I have been tasting at gatherings!
Yesterday I got my first batch of raw cacao powder from our local health food shop and WOW! We made our first batch of truffles based on this recipe:

200g raw nuts (we used cashews)
200g dates
3 table spoons tahini
30g cacao powder
sweetener to taste (used agave but have read some stuff saying it is far from healthy and still researching that!)

They had an amazing rich texture and yummy dark chocolate taste.
We finished them off today and I went out tonight and bought some more dates and nuts to make up a new batch for tomorrow.
Mmmmmmmmmmmmmmmmmmmmmmmmmmmmm.

They were very yummy Rach. I would be interested to read a bit more about Agave too. I have seen it used in a lot of recipies as an alternative to refined sugar. My usual sugar substitute is Maple Syrup. I was under the impression that all tyes of natural sweeteners (eg stevia, maple, agave, brown rice syrup) are a healthier option than refined sugar cane but still need to be limited as part of a healthy diet. Will research some more!
