Zingy Zuccici Pickles Recipe
1kg zuccini finely chopped
2 large onions finely chopped
1 red capsicum finely chopped
2 TBS salt
2 1/4 cups of sugar
2 cups white or cider vinegar
2tsp mustard powder
2tsp ground turmeric
2tsp corn flour
2TBS white or cider vinegar extra
Place 2 onions and a capsicum in a bowl, add salt and mix well, leave to stand for at least 3 hours. Drain well. Combine sugar, vinegar, mustard pdr. and turmeric in a saucepan and boil, stirring until sugar is dissolved. Add veg. and boil for 25 minutes. Mix cornflour to a paste with extra vinegar and stir through.
Cook for 2-3 minutes more or until thickened.
Spoon into warm sterilized jars and seal.

sorry Rach...do I add the zucchini to the onions and capsicum?
just soak the onion and red caps., then where it says 'add veg' put the onion, capsicum and zuccini in... does that make sense?? :)
