I can't disappoint my fans ( all two of them!) so here is the tortilla recipe I have been using.
Makes 8 tortillas (i double it)
1/4 cup cornmeal
1/4 cupcold qater
1/2 cup boiling water
1/2 tsp. salt
1 tablespoon oil
1 cup flour (250 ml)
Combine cornmeal and cold water. Add boiling, salted water in a saucepan and heat over full heat. Stir until the mix is thick. Romove and place in a mixing bowl. Add oil and flour and mix thoroughly. Turn out onto a floured surface and need about 10 minutes. Divide into 8 equal portions. Shape into balls then roll out to .125cm thick (yes exactly!)
Heat an unoiled, heavy cast iron pan over moderate heat and cook one at a time. Flip several times. That's it!
I store them in an airtight container and reheat in the oven wrapped in foil for tea.Yuuuuummmm. :)

They sound good! I will be giving them a go. Much better than the supermarket ones with so many numbers in them!!!
